Vegan Cheesy Nachos

Cheesy Nachos WITHOUT using cheese? Whaaaaat? You must be thinking that it cant be, but you’re wrong! This is thanks to the Nutritional yeast which gives it a cheesy flavour, not to mention the added benefits that come with it; high in B Vitamins, fiber AND is a complete protein, providing all nine amino acids the human body cannot produce! Ingredients

1 Large Wholemeal Wrap* (cut into triangles)

6 Tbsp Nutritional Yeast

1 Tbsp Coconut Oil

(add more if you prefer, note nutritional info will change)

Salt & Pepper

*You can sub this for alternative wraps that may suit your dietary requirement better. If you are after a Gluten-Free alternative, we’ve tried it with Gluten-Free Spelt wraps and they are just as good!

You will also need greaseproof paper

Directions

Preheat oven to approx. 180-200 Degrees C.

In a bowl or pan, melt coconut oil, drop in your cut up wrap triangles, using your hands to coat them in the oil thoroughly. Then, add Nutritional yeast, salt, pepper and shake them around again.

Prepare a baking tray with greaseproof paper and lay out each triangle, making sure they don’t overlap each other.

Bake in the oven for approx. 20 minutes (depending on strength of your oven) or until golden crispy.

These were SO moreish, we couldn’t keep digging in and even had to make a second batch as they went so quick!

We enjoyed ours with a side of fresh tomato salsa, perfect healthified party dish!
