Oatmeal Raisin (Wheyhey) Cookie Sandwich

Ingredients

2 Wheyhey Vanilla Ice-Creams (to find your local stockist click here)

50g Ground Oats

50g Oats

60g Coconut Oil

1 Tsp Barley Malt Syrup (or similar dark syrup alternative such as molasses)

1 Tbsp Sweet Freedom Syrup

2 Drops Cinnamon Stevia (or alternative)

½ Scoop Bulkpowders VitaFiber Powder

1 Tbsp Cinnamon

15g Raisins or Sultanas

½ Scoop Vanilla Casein

You will also need greaseproof paper

 

Directions

First of all you will need to get your WheyHey ice-cream and press it onto the greaseproof paper. Your fingers will get dirty, but its all for a great cause.

Stick that in the freezer.

In a bowl (in microwave) or pan, melt coconut oil, then mix in all of your ingredients, you will get a runny but thick batter.

Prepare a tray with more greaseproof paper and pour your batter onto it, spread it round with a knife or back of spoon to cover as much surface area.

Place in freezer.

Wait patiently for 10-15mins. (Squat jumps optional).

 

 

Take it all out of the freezer and cut up into shapes with your preferred cookie cutter, cut the shapes your heart most desires and then layer up your sandwiches.

Place back in freezer (as the ice-cream may have melted a little in the process).

Eat the cookie batter leftovers (duh) and wait until your sandwiches have gone hard once again.

 

 

Note: If you want a less calorie dense sandwich, just use one cookie slab instead of two or make them thinner than we have. You can also sub the syrup for calorie free syrups and the casein for preferred flavour.

 

Recipe yields 4 sandwiches.
